Building an eco-restaurant
First out of the blocks from the ‘Dine On Sheppey’ stable is an exciting eco-restaurant concept. Made almost entirely from re-purposed items and prominently positioned on The Island, this fine dining experience would be the envy of many communities across the whole of the UK.
Using proven eco-building techniques the restaurant would boast some of the most efficient running costs in the industry and would be one of the most sustainable businesses around.
It would also look to establish it’s own market garden and support other market gardens on The Island.
With local produce and ecological sustainable principles at it’s heart you would think that this would be enough to make it stand out but the business itself would be set up as a Community Interest Company, meaning that profits would be ploughed back into the local community through helping set up and fund a local catering school and supporting local charities.
The scheme also looks to feature celebrity chefs where they would take over the kitchens for a day or two and prepare a special menu for diners on The Island to enjoy.
